Brewing with a Chemex
The Chemex is a simple glass pour-over brewer, designed in 1941. Its thick paper filter catches oils and fine sediment, so you get a remarkably clean, bright cup that lets every flavor note come through.
Open the filter so the thick, three-layer side faces the spout. Rinse it with hot water and pour that water out, add your ground coffee, then set the Chemex on a scale and zero it. When you press start, the pour pace number climbs at the speed you should be pouring. Try to keep your own scale close to it and you'll hit each pour right on time. It's a guide for your pace, not a reading from your scale.
